The number of words that Eskimos* have for snow is legendary (and the subject of numerous old chestnuts**). But how many shades of white are there? At least ten times more than you expect the first time you paint a wall, most likely!

The more shades of white, the better, if it helps keep penguins safe from those ravening polar bears...

* Which I suspect has become a politically incorrect term of some sort by now. In which case, apologies to any Artic-dwellers who I've inadvertently upset...
** Hmmm... chestnuts. Now those would go well in all that cold and snow. Roasted, perhaps. Or in little fluffy cakelets, like these...

Mad As A Penguin – Banana, Choc Chip & Cinnamon Brownies

Buoyed by the recent success of the Sticky Penguin brownies, all sorts of ideas for things to put into brownies have been starting to pop into thoughts, usually late at night before dozing off. From the sublime to the probably-completely-ridiculous, invented brownies are suggesting themselves at almost every turn.

Perhaps there’s really nothing new under the sun, and every possible brownie combination’s already been tried and perfected in gleaming kitchens and shadowy corners of the interwebs. But that’d spoil all the fun and novelty of trying out whatever latest idea’s clamouring for attention and a share of the mixing bowl.

The thing I liked about the Sticky Penguins was that the caramel formed a separate layer in the brownie, rather than being stirred through, like most brownie add-ins and variations. The separate layer gives a concentrated taste of the extra flavour, while still having plenty of the proper brownie taste – hopefully a way to enjoy the best of both worlds.

The newest additions to the penguin baking repertoire are Mad Penguins, so called because they’re a little bit... bananas. They’re also a little bit chocolate chip and cinnamon, and a lot of chocolatey-squidgy-goodness in general.

If you want a Mad Penguin around the house, either deny her trifle, or follow this simple recipe...

What’s in them**
Brownie mixture
198 g butter / margarine (I used low-fat butter blend), cut roughly into pieces the same size as the chocolate
½ cup plus 1 tbsp dark chocolate, broken into pieces (I used Cadbury's dark cooking chocolate)
3 large eggs
¾ cup caster sugar
¼ cup + 1 tbsp soft brown sugar
1 tsp vanilla extract
½ cup plain flour
1½ tbsp cocoa powder
1 - 1½ tsp cinnamon (depending on taste)
Pinch of salt
Banana layer
2 overripe bananas
1 tsp cinnamon
½ - ¾ cup dark chocolate chips***

What to do
1. Preheat the oven to 160˚C.
2. Line (but don’t grease) a 9 inch square cake tin with baking paper.
3. In a large bowl on top of a small saucepan of simmering water, melt the butter and chocolate, stirring the mixture regularly (you can do this directly in the saucepan if you prefer – it doesn’t kill the chocolate enough to interfere with the flavour, but I think the double-boiler approach gives a smoother texture). Once the chocolate is melted and just a few small blobs of butter remain, remove from the stove and stir in the rest of the butter so it melts. Set the mixture aside, and let it cool down a bit.
4. Crack the eggs into a mixing bowl and whisk lightly with a fork to combine the yolks and whites, and add the vanilla extract. Add the caster sugar and soft brown sugar, and mix until smooth.
5. Add the egg and sugar mixture to the cooled chocolate and mix until just combined.
6. Add the sifted flour, cocoa powder, cinnamon and salt, and mix until the flour is combined, avoiding over-mixing.
7. Pour half of the brownie batter into the prepared cake tin and refrigerate for around 30 minutes. (The other half of the batter doesn't need to be put in the fridge). This helps make the mixture a bit less runny before the banana mixture gets added.
8. Peel and mash the bananas until smooth and mix in the cinnamon.
9. Spread the banana mixture on top of the cooled brownie batter, spreading it right to the edges, and sprinkle with chocolate chips. Pour the remaining half of the brownie batter on top, ensuring that all the banana is covered.
10. Bake for 25-35 minutes, or until the sides of the brownie are just coming away from the pan. The top of the brownie should have a crackled crust, almost as if it's formed a skin on top. It's probably ready before you think it is - this is a very fudgy, squishy brownie.
11. Allow to cool in the pan, remove and ensure completely cool, then slice into pieces (I cut each batch into either 16 or 20) with a sharp knife or a pizza wheel.

* Coming up with odd little ways to celebrate the twelve days before Christmas is a wonderful way to buy some more time to edit photos such a nuisance when you want to get recipe posts up on time!
** I use US measuring cups, which are 10 ml smaller (for a cup) than Australian ones. If you don’t have them, and can’t be bothered doing online conversions, taking about a tablespoon out is about the same... and a disorganised baker will get sorted and measure it properly for the next recipe, and update the amounts to provide grams as well
*** Cooking with penguins is a somewhat inexact science, and things tend to get added till they look about right...

Crunch Time

There are all sorts of uses for cornflakes as crunchy toppings. And I’m not averse to some crunch in a burger, either (I use Panko in mine). But something about this just doesn’t quite sit right with me... Rice krispy burgers.

If I stop and think about it, it makes a lot of sense – the crunch, the texture, the convenient size, the wheat-free angle. But my top-of-mind thought was of something half-way between a burger and a rice krispy treat (those marshmallowy things). Not good. Not good at all.

Perhaps it's a sign of some of the strange recipes I’ve been coming across (or coming up with) lately that even something innocent can initially appear peculiar. Gutter thinking for food bloggers?

Cooking rule #73 – not everything has to relate to baking and indulgence. Most things. But not quite everything...

And somebody, somewhere, breaks every single rule. Several of them at once in these, I suspect. Bacon rice krispy treats...

Navel Gazing At The Sunrise

La rentrée – the French term for coming back after the month-long summer break seems so apt for the return to “real life” after the temporary detours of holidays, Christmas, weddings, festivities, visitors and complete utter madness. A new beginning, combined with a vague reluctance to leave a parallel world...

It suggests a simultaneous ease and discomfort that seems to perfectly capture the feeling of having been away forever but no time having passed, of things familiar that don’t seem quite the same as before. And that our existence is one long sequence of comings and goings, the waitings-to-go and the almost-coming-back, befores and afters and durings, so that both being there and not there become just as real as each other, and that perhaps you need to have one to fully appreciate the other. Perhaps.

I came across la rentrée before going on my honeymoon last year (well, I did say it was circular) but, unlike a lot of posts that I scheduled for while away, wanted to turn this idea over and give it a good hard think (so it seems appropriate to share at the end of the week when lots of people have returned to work after the Christmas break). It’s easy to predict the Splat? that happens immediately after returning (or, in my case, with astonishing precision three days later – happens every time), what’s harder to anticipate is what is left after that passes. La reentree seems to be all about a delicate ambiguity; the having-had and the having-to-finish, a little like sunrises and sunsets. Different to each other, and with infinite individual variations as well.

All of which seems very thoughtful and vague, and a small interlude between baking and foolishness, like a dormouse stuffed into a teapot. Which makes me wonder – if you navel gaze at the sunrise... is that when you have an orange-coloured sky?

At Least It Isn’t Fried

If you’re already struggling to stay on the bandwagon of New Year’s healthy eating resolutions, it might be a good idea to look away now*. Some people mostly crave sweet snacks (chocoholics, unite!), while others favour salty morsels, but there are more and more ways to combine the two. Bacon cupcakes. Salted caramel. Pretzel M&Ms.

This one is a little more dramatic, if also a little more style-over-substance in its combination of sweetness and saltiness...

What it lacks in not being fried, I suspect it more than makes up for in the sugar and butter department. Or is it better to have your food-disguised-as-other-food at least have the appearance of being healthy? I wonder if it also carries a double serving of guilt? Especially in January...

When you have to go back to work after days of pootling round in bare feet and a carefree (and dishevelled) manner, snacking vaguely when the urge takes you, making spontaneous plans and taking long walks and, of course, doing lots of baking for anybody who stands still long enough to be offered a brownie...

When it feels like the end of a very abbreviated summer holiday and a slide into (eep!) reality is imminent... no, make that is here...

There’s only one thing for it. Especially if you want to get up on time...

The weather down the coast can be perfect for a summer-avoiding penguin. A little fresh and breezy, and still beautifully sunny. Or it can be positively capricious, leaving us alternately melting and freezing by turns...

It takes a very, very cold day to reduce me to wearing anything even vaguely approaching a hat. The cold the first day we went to the Eiffel Tower was that kind of cold.

So it’s just as well I didn’t know about this when I was there...

The Morning After The Night Before

Some people recover from a night of partying with a mug of strong coffee. Others, with a bacon and egg roll. Whether you sleep off the after-effects or avoid them in the first place, New Year’s Day tends to be involve some interesting food.

So this seemed like both a tasty and a practical option – Christmas pudding ice cream...

It uses up some of that lurking residual pudding.
It’s indulgent, but the greasiness of the breakfast fry-up is replaced with a more refreshing coolness to balance out the rich, fruity flavours.
It’s a great option on a hot day.
And, depending on how you make your pudding, it could maybe even qualify as a hair of the dog. Just think of it as a change from the bloody mary...
